A baker's floury hands working dough in early morning light

Cinnamon and cardamom buns baking in the oven

4am, every day

How we bake

Slow dough, early alarms.

Morning Ritual is June Calloway and Teddy Brandt, two bakers who met on the 4am shift and decided to open the bakery they always wanted on their own street. Flour is milled in the Willamette Valley, butter comes from a creamery on the coast, and nothing leaves the kitchen until it has had time.

1
2pm: mix and rest
Doughs are mixed after we close, then rest in the cold for 18 hours to build flavor.
2
4am: shape by hand
Every bun is twisted and knotted by June or Teddy. No two look quite the same.
3
7am: out of the oven
Cardamom buns first, then croissants at 7:30 and sourdough at 10. Come early.
